So... Who can remember how to make pancakes?

I can cook the things well, but I can never remember the proportions of stuff that go into the mix. If ingredients are acquired and appropriate toppings purchased then I would suggest a small pancakey type do next Tuesday night, since it's the proper day for it and all that...

4oz plain flour (4 or 5 heaped dessert spoons)
2 eggs
300ml milk (bout 1/2 a pint)

I can never remember either, so I think I wrote it down. Except I can't remember where I left that without actually being at home, so I've probably binned it already.

In any case, my usual tactic is to phone my mum :) Or look on the web.

The latter suggests:

  • 250ml of milk
  • 2 eggs
  • 100grams plain flour
  • 0.5 ounce butter
  • Put the milk and eggs into a bowl and gently beat until the eggs are broken. Whisk in the flour until the mixture is the consistency of double cream.

    Decant the mixture into a jug for ease of pouring. If the mixture is lumpy, you can strain it through a sieve.

    Gently melt the butter in an 8" pan and pour it into the pancake batter.

    Without adding any extra fats to the pan, pour in enough mixture to coat the bottom (depending on how thick you want your pancake) and allow it to cook until the top of the pancake is "dry".

    Turn the pancake with a pallete knife or by tossing and cook until it is just browned.

That said, I'll no doubt be expected at the Tuesday campaign too...hmmm...I wonder if I can get out of it for pancakey goodness.

If I make pancakes for me (i.e. one portion) I use three eggs, beat them with with three tablespoons of caster sugar, add the same amount of milk and add as much sifted plain flour as necessary to have the right consistency (roughly 3-4 tablespoons, this depends on the size of the eggs).
